Preheat oven to 180°C (356°F)
Put chicken skin on baking tray, give a light spray of oil and coat with garlic salt, place in oven for 20 minutes or until crispy.
Rest cooked skin on wire rack for 10 minutes to cool.
Meanwhile, cut butter in half, adding one half to a medium saucepan and the other half to a medium sized bowl.
Melt the butter in pan, adding the pealed garlic, cooking over a low to medium heat so not to burn your butter.
Once garlic is cooked, take off the heat.
Blend the cooled chicken skin to make a crumb, before adding the parsley along with the garlic and melted butter mix.
Blend on high for at least 1 minute.
Add the blended mix to the remaining butter in bowl, stir until completely incorporated.
Store in a piping bag or covered in a bowl in the fridge until ready to use.
