Pre heat baking sheet
Pre heat the baking sheet so the kiev gets a nice crispy base

Pre heat oven to 180 °C, popping baking tray into oven.
Butcher the chicken breasts from the chicken and remove skin.
Cut mini fillets from chicken breasts and then lightly score the underside of breast creating a pocket (try to make this the size of the mini fillet) Lightly bash the mini fillet.
Alternatively, if using ready butchered chicken breasts (and mini fillets have been removed). Starting from the fat side of the breast, use a sharp knife to make a pocket in the breast, taking care not to go all the way through.
Fill the pocket with the chicken skin butter or garlic butter alternative. Top the pocket with the flattened mini fillet, tucking the edges inside.
Season flour with salt and pepper before coating each breast in flour.
Mix the eggs and milk and dip each breast, covering completely.
Cover with breadcrumbs.
Repeat the egg wash and breadcrumbs to help stem any leaks.
Put the chicken breasts onto the pre-heated baking tray and cook for 20-25 minutes or until cooked through.

Blend all the ingredients until smooth consistency
Pop into fridge until ready to use

3/4 cup plain flour
3 eggs
1 tbsp milk
neutral oil (for spraying)
